There is a range of cookery courses to choose from, each inspired by the tastes of Italy. Classes are kept small for maximum enjoyment.
Tutors include Giancarlo Caldesi, Katie Caldesi and head chef Gregoria Piazza.
Each course includes:
• A combination of hands-on cooking & demonstrations
• Meal (dishes prepared during the class)
• 2 drinks with the meal (this would include wine, beer and soft drinks)
• Your own cotton apron to take home

Pasta and Pizza of course!
On this course Giancarlo will unveil the secrets of the two most famous staples of the Italian art of cooking!
Come and join us for a morning of fun where you will learn how to make fresh pasta ribbons, fresh stuffed pasta paired with classic italian sauces, and the perfect pizza dough.
The course will culminate in a delicious meal with the dishes you will have prepared, with a glass of wine or a beer.
Packed with information on how to finally nail weight-loss and in conjunction with the Caldesi’s latest cookbook ‘The Low Carb Italian Kitchen’ this course will explore the many health benefits of a low-carb diet.
When Giancarlo was told he was suffering from diabetes type 2, Katie instigated a low-carb diet using many of the dishes he will be teaching you on the course. Dishes that still allow you to enjoy eating, that will keep you feeling satiated and full of energy.
As a result of changes to both diet and life-style the whole family have benefited and Giancarlo’s diabetes symptoms disappeared too!
On this recipe packed course you’ll be cooking a varied selection of Mediterranean dishes for breakfast, lunch and dinner (all of which feature in the new book) and learning some great tips and tricks on how to avoid high carb foods and sugars as well as how to replace filling portions of potato, pasta and rice with much healthier and equally filling alternatives.
The ultimate fish and seafood masterclass comes to our restaurant in Bray, Berkshire.
Using a variety of sustainably sourced fish and shellfish, you will be shown how to fillet, prepare and cook some delicious Italian fish recipes such as black bream baked in salt, slow cooked calamari, stuffed mussels, spaghetti con le vongole and more.
Brush up your knife skills, you’ll learn everything you need to know from choosing the freshest and best to descaling and pin-boning to serving and presentation.
After the cooking is done you’ll sit down in the restaurant and enjoy a 3-course lunch of the dishes you’ve made with wine.
After Katie & Giancarlo Caldesi's trip to Sicily researching dishes for their cookery book 'Sicily – Recipes from an Italian Island' we are delighted to share with you a collection of uncovered forgotten recipes and some more contemporary favourites.
Together with either Giancarlo or Gregorio you will have the opportunity to recreate a traditional Sicilian meal.
Get the chance to make your own arancine - stuffed and fried rice balls along with some classic of the Sicilian cuisine such as: Caponata, Slow-cooked cauliflower in red wine, Spaghetti with sardines, wild fennel and pinenuts, Melanzane parmigiana, layers of baked aubergine, Parmesan, tomato and basil.
Learn how to make the fabulous Farsumagru – rolled stuffed beef cooked with ragu and peas and a splendid fig and orange cake to finish your meal.

After Katie & Giancarlo Caldesi's many trips to Rome researching dishes for their cookery book 'Rome – Centuries in an Italian kitchen' we are delighted to share some of the stand-out recipes from the book.
Together with either Katie or Giancarlo you’ll recreate a feast of Roman proportions. You’ll also learn the history, traditons behind the dishes as you cook them.
At the end of the course you will sit down and enjoy all the dishes you have created, accompanied by carefully and specially selected regional wines. It will be an unforgettable gastronomic walk through history.

Taking Italian cookery to ‘another level’ you’ll learn recipes that are sure to become dinner party favourites and you’ll also learn how to present them professionally for the complete ‘restaurant quality’ result.
Following an intense morning of tutorage from Giancarlo Caldesi himself or head chef Gregorio you’ll sit down in the restaurant and enjoy the dishes you’ve made with a glass of wine to match.
Giant lemons as sweet as syrup and seafood fresh from the fisherman’s net are synonymous with the cooking of Amalfi.
On this course you’ll learn some of the stand out dishes from the Caldesi book ‘The Amalfi Coast – a collection of Italian recipes’. Using ingredients that showcase the best of the Amalfitan larder you’ll prepare authentic, seasonal dishes that delight.
Fresh flavours, simplicity and complimentary combinations are the watch words as you create authentic Amalfi on a plate. The only thing we can’t guarantee is the sunshine and sea views!
Following your busy morning of culinary creation you’ll sit down in the restaurant and enjoy your dishes with a glass of wine to match.
On this course, drawing recipes from Katie and Giancarlo’s best seller cookery book “Tuscany: Simple meals and fabulous feasts”, Giancarlo will introduce you to the careful preparation of delicious typical Tuscan dishes, with the course culminating in a traditional Tuscan meal paired with regional wine.
£135 to £175 per person depending on course. Each course includes:
